New start

In 1989, Patrick & Pascale Henriroux, who were in charge at La Ferme de Mougins, were invited to take over the running of La Pyramide,
afforded a new start with a modern property,
a magnificent restaurant, two private rooms,
24 bedrooms and a fabulous French-style garden.

It opened on 18th June 1989; ‘a sign, a signal’, as Patrick Henriroux said to his team. Seven months’ hard work to get a message across; ‘we intend to work without forgetting, but without forgetting to be in touch with current tastes.’ In March 1990, La Pyramide received its first star from the Guide Michelin, and the hard work of all involved was rewarded in March 1992 with a second star. The secret behind this success was the welcome, service, friendly smile and caring attitude; of course, the establishment depended on its cooking, but hotel skills also brought a not inconsiderable boost to La Pyramide’s good reputation.

In March 1995, there was another bolt from the blue: the owner for which Patrick & Pascale Henriroux and their team worked experienced financial difficulties. Notwithstanding this setback, everyone pulled together and the local clients supported the establishment by their loyal and regular attendance. In November 1996, a compromise was reached; Patrick & Pascale Henriroux bought out the establishment, and then became owners of the bricks and mortar in June 1998. The deal was completed on 18th June, the anniversary of the reopening; ‘another sign, another signal,’ as Patrick
Henriroux put it.
